Preprosta marinada
10. februar 2009 ob 14:41 | Črt Butul |Preprosta ribja marinada, ki jo pripravimo v hladnih dneh, nas spominja na poletje. Okusi nam pričarajo vonj morja in spomin na tople dni. Ribe so bogat vir beljakovin in kalcija.
V ribarnici kupimo kilogram svežih sardel ali sardonov (inčunov). Očistimo drobovino in jih razpolovimo ter izrežemo še sredinsko kost (hrbtenico). Ribice operemo v slani vodi in odcedimo. Položimo jih na širok raven krožnik, eno poleg druge. Čez narežemo čebulo na zelo tanke kolobarje.
Če želimo omiliti okus čebule, jo prej malo popečemo na žaru.
Potresemo s sesekljanim peteršiljem in strokom drobno sesekljanega česna, dodamo poper, sol.
Pokapljamo z domačim vinskim kisom ali z limoninim sokom. Za zaključek dodamo še oljčno olje. Krožnik ovijemo v folijo in položimo v hladilnik. Če jed pripravimo prejšnji večer, se bodo okusi med seboj prepojili. Še bolj nam bo šla v slast.

Saj ne rečem, usta imam polna sline, če le pomislim na morske jedi. :-)
Ampak, tole meso je presno. Saj ne rečem, če ribo ujameš sam, ali pa jo je ujel ribič par ur, preden si jo od njega kupil. Realnost je, da smo na celini odvisni od ribarnic. Nič slabega o njih, vendar si jaz ne bi upal dati na krožnik presno meso iz celinskih ribarnic…
OK, saj sem pismen, napisala si “kupiš svežo ribo”, ampak to je “next to mission impossible”.

Sicer piše sardele ali sardoni, ampak če se res bojite “celinskih ribarnic”, skočite do tiste v E.Leclercu, kjer dobite sveže piranske brancine z značko zataknjeno za škrgo, na kateri je napisan točen datum ulova. To je njihova garancija, da je riba res sveža. Obljubim, da bo okus popolnoma drugačen od vseh rib, ki ste jih kupili na ozemlju slovenskem.

Tisto niso “ulovljeni” brancini, so gojeni, od Fonde http://www.fonda.si/index.php?catID=5 jih lahko naročiš tudi po spletu (so pa odlični, četudi gojeni,da) Leclerk pa ni, da bi tam ribe kupoval. Na lj. centralni tržnici dobiš kaj dovolj svežega za tole.

@nejc: si imel namen napisati “gojeni in ne divji”? Ker tako gojenega kot divjega brancina je treba ujeti/uloviti.
Vsekakor so boljši tej, gojeni, ker so gojeni z najboljšo krmo, kar jih je mogoče dobiti. Tisti divji pa, vemo, pojedo še marsikaj neprimernega.

Lej, brancini niso ciplji, da bi se po dreku pasli. So predatorji in svoj plen ulovijo. Ulovljen, svež, divji brancin, je boljši kot gojeni, četudi hranjen z najboljšo krmo (gre za industrijsko pripravljeno suho hrano, brikete).
Je pa je pri ribi najpomembnejše da je sveža. Tako da je v praksi Fondin svež brancin, četudi gojen, boljši kot divjak, ki se je tri tedne valjal po hladilnicah.

Na njihovi strani je slika hranjenja, v vrečah na čolnu so briketi/peleti/zrna, sušena hrana skratka.
