Piščanec v pečici
23. januar 2009 ob 7:55 | Črt Butul |Kako naj se prehranjujemo, da bomo imeli idealno težo? Kakšna naj bo naša prehrana? Pomembno je , da hrano pripravimo tako, da je najprej lepa za oči, nato pa okusna za naše brbončice. Proces prebave se začne še preden pride hrana v želodec. Začne se pri pripravljanju hrane. Jesti moramo počasi in ob vsakem grižljaju uživati. Obroki naj bodo pestri. Sadje in zelenjavo moramo jesti večkrat na dan, največ vlaknin in tekočine potrebuje telo v dopoldanskem času. Izogibati se moramo maščobam, najbolje je jesti pusto belo meso.
Perutnina je zelo pomemben vir beljakovin. Paziti moramo na vidno odvečno maščobo. Nekaterim gre zelo v slast hrustljavo zapečena piščančja ali puranja kožica, vendar vsebuje največ mastnih snovi, ki za naše dobro počutje niso priporočljive. Uravnotežena in pestra prehrana z malo maščob in veliko prehranskih vlaknin zmanjšuje tveganja za obolenja srca in ožilja. Prav perutninsko meso je zaradi svojih kakovostnih in senzoričnih lastnosti tista vrsta mesa, ki jo lahko uživajo ljudje vseh starostnih skupin. Odlikujejo ga mehkoba in nežnost mišičnih vlaken, delež visokovrednih beljakovin in prijetna aroma, ki omogoča zelo različne načine priprave. Za zdravo prehranjevanje je zelo pomembno, kako in s čim hrano začinimo. V naši kuhinji so zmeraj dobrodošla sveža zelišča, saj na tak način dodajamo hrani okus, ne pa kalorij. Marsikatero zel lahko v naših krajih naberemo tudi preko zime, ko druge dele Slovenije prekriva sneg ali pa je zemlja pogreznjena v zimsko spanje in počiva. Izkoristiti moramo prednosti Sredozemlja. Pri uporabi svežih zelišč so okusi bolj polni kot pri posušenih. Sedaj imamo na voljo svež šetraj, timijan, divji por, divji drobnjak, rožmarin in še kaj bi se našlo. Naučiti se uporabljati zelišča je garancija za okusne in zdrave krožnike, ki so lahko prebavljivi.
Predstavljajte si piščančja bedrca povaljana in marinirana v svežih zeliščih, nekaj strokih česna in oljčnega olja. Če jedem dodajamo ščepec svežih darov narave, naj bo uporaba suhih dvakrat večja, saj se pol okusa pri sušenju izgubi. Preden postrežemo obrok, skuhamo nad soparo nekaj zelenjave in si pripravimo nežno polento, saj se zelo lepo prileže k mesu in k zelenjavi.

Piščančje meso nežno solite, po želji popoprajte in povaljajte v mešanici sesekljanih zelišč ( peteršilj, šetraj, bazilika, rožmarin, majaron), odvisno od letnega časa. Meso naj bo v “paci” vsaj dve uri. Če imate na voljo sveža zelišča, uporabite sveža. Če imate radi intenzivne okuse, nadrobite rožmarin, če želite nežno meso, dodajte timijan. Vse skupaj pokapljajte z oljčnim oljem, lahko dodamo nekaj kapljic balzamičenga kisa ali nekaj koščkov limoninih lupin (če niso škropljene).
Zelenjavo skuhajte nad soparo, ostati mora hrustljava. Vse skupaj položite v pečico in pecite približno pol ure na srednje močni temperaturi.
