Čičerikini mafini
9. februar 2008 ob 13:15 | Črt Butul |Čičerika raste kot stročnica v kratkih strokih z rjavimi semeni. Izvira iz Azije. Danes jo največ pridelajo v Turčiji, Mehiki in Indiji, kjer spada med osnovna živila.
Zanimivo, že naši dedki in babice so vedeli, kako so stročnice zdrave in koristne. So odličen vir beljakovin. So bogate z vitamini, ne vsebujejo skoraj nič maščob. Priporočljivo jih je jesti vsaj trikrat na teden. Pred kuhanjem jih namakamo najmanj 12 ur, tako nas po zaužiti hrani ne bo napenjalo. Hrano solimo šele ob koncu kuhanja, s tem preprečimo, da se lupina zrna strdi. Bogate so z vlakninami, s tem lajšajo zaprtje. Znižujejo vsebnost holesterola v krvi, imajo tudi malo kalorij. Zanimiva je trditev, ki sem jo nekoč prebrala v neki reviji: » Če uživate stročnice, boste hitreje postali siti kot debeli.«
ČIČERIKINI MAFINI
SESTAVINE: 20 dag blitvinih ali špinačnih listov, 20 dag čičerike, 10 dag kravjega sira, 2 jajčna beljaka, poper, sol, sveža zelišča, 2 dl mleka, 3 jušne žlice ovsenih kosmičev, oljčno olje
PRIPRAVA: Čičeriko čez noč namakamo v vodi, nato jo skuhamo v slanem kropu. Kuha se približno 45 minut. Blitvo operemo pod tekočo vodo. Ovseni kosmiči naj se namakajo vsaj pol ure v mleku. V mešalniku zmešamo zelenjavo, čičeriko in nariban sir, dodamo odcejene kosmiče. Po želji začinimo s soljo, poprom in svežimi zelišči. Dodamo tudi žlico ali dve oljčnega olja. Beljak stepamo posebej in ga nežno vmešamo v pripravljeno maso. Vse skupaj nalijemo v modelčke za mafine in pečemo v ogreti pečici 20 - 25 minut na 180 stopinj C.
Postrežemo na mladi špinači. Po želji jedi dodamo nekaj kapljic oljčnega olja in balzamičnega kisa.
